    This week we're heralding the arrival of National Pizza Month (aka every month ever?) with a true Binging with Babish conceptual reach - using Jon Stewart's famous rant against Chi-Town's deep-dish speciality as an excuse to make some ourselves. With cups of sauce and pounds of cheese held at bay by a towering levee of buttery, flaky crust, how could you not like Chicago-style deep-dish pizza? Assuming you've never tried New York-style pizza, of course.

    Is no one going to explain why the cheese goes under the sauce? Okay, I guess I will. When you leave it in the oven for 40 minutes, the cheese would all burn if it went on top.

    Okay, as a Chicagoan, I need to point out that deep dish is *NOT* Chicago-style pizza.
    Chicago-style pizza is a completely different type of pizza. Deep dish simply happens to be the most popular type we have. Chicago-style is a traditionally flat pizza with a hard buttery crust, very thick cheese, and large balls of sausage. That is the most common type of pizza you'd find in the city.
    Homerun Inn is a prominent example of this type of pizza, though I personally prefer Beggars.

    I have lived “near” Chicago, so I have had all the Chicago Style Deep Dish. And it’s amazing.
    When I (eventually) take a trip to New York, where do I want to go for pizza? Have at it, USclip.

    thats a pan crust my guy. gotta go thinner on the crust. possibly adding another layer of crust cheese sauce on top to make it stuffed

    I don't really understand your problem with sauce on top. New Yorkers do it too with the Brooklyn square and it is also delicious. It's a Sicilian thing. Also, I don't get the big deal about "New York" style. In Chicago at least they are cooking you a fresh pie. New York style usually means you're getting a slice that's been sitting there god knows how long and reheated with OK crust and average "meh" cheese. The better style of pizza in New York is Napoli style, not New York, but Napoli style is way overpriced and you might as well just make it at home.

    I may be out of line here, but I really don't see what's so special about New York Style pizza. It's basically a giant slice of Little Caesar's. It's a huge triangle of cheese and thin but soft dough with a bunch of greasy ass cheese that is somehow so greasy that it makes literally everything else greasy and gross.

    If you ever come to the Windy City, definitely recommend checking out Pequod's sometime! So good
