    Dude you're making duck jerky not Peking duck by hung dried for 3 to 5 days. Anything meat would rot in couple days.

    Peking duck is just roast duck northern Chinese learn from southern Chinese. Roast duck is not supposed to be crispy. Roast pig is supposed to be crispy.

    It looks great!! It was also clear step by step instructions. I'm just wondering what's the ratio of each spices for stuffing. It can be overpowering with certain spices if it's not balance. Thanks!!

    If you think about it, Turkey and Chicken should translate pretty well for this recipe too; although the meat won’t be nearly as sweet as Duck meat

    Beautifully done! But still I prefer a fat duck rather than a lean one, cause that’s what ducks in Beijing are famous, fat and thick skin.
