    I am one of those who use flour just for binding 1/4 cup to 1 cup of cornmeal, not as the main dry ingediant, only 2 tablespoons of sugar, in another version 2 cups cornmeal still with 1/4 cup of flour.... but, then you really have to be careful with the othe ingredients and temperature so as not to produce a rock LOL
    All I can say is that the flavor of the corn really comes out. Quality of cornmeal is key

    In Europe I have often had to settle for Italian (or other) polenta wich is not usually nixtamalized or otherwise enriched which means a lot of the nutrients are locked in, and you have to be sure not to think you are going to have that as a meal. Which a good enriched cornmeal can be. If you add all that other stuff in though. I guess it is fine I would like to try the recipe and also do my own spin on it.

    Honestly Jenna is right XD you should put corn kernels in the cornbread. It’s not real southern cornbread unless you make it with corn, jalapeños, and maybe a little cheese, and then cook it in a cast iron skillet.

    When making cornbread, I typically add about a teaspoon (sometimes a tablespoon) of maple syrup to the batter. You should try it next time!!

    I don’t know why this just popped into my head. Like do you guys ever have memories that you forgot you had and suddenly they come back full force? Nope? Just me and my trauma? Ok..
    Anyway, when I was around 10 years old, I wanted to make my mom a cake for her birthday. We were super poor at the time but we always had corn bread mix on hand because we are southern as heck. So I decided, well it’s kinda a cake, let’s do it! 😂 I was home alone after school and made the corn bread. I almost set the house on fire and burned my arm by laying it on the cake tin BUT I made her a corn bread birthday cake! I put candles in it and waited for her to get home. I surprised her with this monstrosity and she was shocked, mostly from the fact that I probably could’ve killed myself and my entire apartment complex by making it... ahaha that memory just came up in my mind because of the way Julien cut the bread. So funny!!! Good times 😂😂😂😂♥️♥️♥️

    Cornbread tip of the day, put the pan in the oven for about 15 mins to get nice and toasty then add your cornbread batter makes it nice and crunchy on top :) also use a cast iron skillet. And also flipping it onto a plate is best lol
