    CHOCOLATE CAKE - - 4lb and 8lb portions for each cake
    - Makes 2 x 6” & 2 x 10” Round Cakes -
    3 cups unsalted butter
    7 ½ cups sugar -
    12 eggs
    3 cups cocoa -
    6 cups water
    8 ¼ cups flour -
    1 tablespoon + 3 teaspoons baking soda -
    1 ½ teaspoons baking powder -
    3 teaspoons salt -
    VANILLA CAKE - - 6lb portion
    - Makes 2 x 8” Round Cakes -
    2 cups unsalted butter
    4 cups sugar -
    2 teaspoons vanilla -
    8 eggs
    2 cups milk
    5 cups flour -
    1 tablespoon + 2 teaspoons baking powder -
    1 teaspoon salt -
    BUTTERCREAM - - 3 times this recipe
    1.2 kg sugar (approx 2.65 lbs) -
    24 large egg whites
    3lb unsalted butter, room temperature
    3 teaspoon pure vanilla extract -
    1 ½ cup water
    1 cup sugar -
    1 cup water
    2 x each 6”, 8” and 10” Round Cake Pans -

    Lovely cake - question: do you allow your cakes to “settle” before putting them in the fridge? I’ve read in so many forums that’s how you avoid bulging buttercream from the sides. How do you avoid bulging sides?

    Don't use monsteria leaves! They are full of oxalic acid crystals, which is a spiky way to poison the people you bestow your cake upon. :/

      Apparently sap from inedible flowers gets onto the cake and hurts people more often than you'd think. Take care to correctly identify edible flowers.

    i know this video is almost three years old, but for future reference: i'm a floristry student and one of the things we've been taught is that you never know what's on those flowers (pesticides, etc) unless you've grown them yourself, so they should never touch anything you're going to eat. there has to be cling wrap or something between the flowers and the cake. i'm assuming everything went well with this cake and nobody got sick, but it's better to be safe than sorry. :)
    that said, it's an absolutely beautiful cake! also, the flower whose name you didn't know is a protea called "blushing bride" which is quite fitting, hehe.

    I can see you put the dowels in every cake, but don't you need to put a giant dowel through the 3 cakes so they won't fall apart? Like, when you take the cake to destination. Because they're just one above the other, not stuck together 😨

    OMG I am making this cake for my cousins party tomorrow, I asked my cousin and my aunty to go get the ingredients and they forgot get the buttercream ingredients
    Sad isn't it. they also forgot to get the middle cake pan. There are going to be 550 people there at the minimum so I don't know what to do.

    Tip: if YoU DONT WANT to EAT WOOD, put chocolate a straw let it harden and cut the straw off and u have some edible dowels!
