    all that b.s for a roasted duck , a roasted chicken from Safeway or Costco would taste as much or even better. In fact a roasted chicken would taste better , a suffocated duck like that , which wasn't bled out , is full of blood and the meat would be full of it and disgusting .

    Pumping air beneath the skin is common practice in the butchering of animals if you want to get rid of it real quick. I guess that's where it comes from.
    Especially for wildlife, ex. a deer, you make an incision at the ankle, put the nozzle in and close the incision tight, the air has no way to escape other than separating the sking from the meat.
    EDIT: same exact thing he did with the duck from its neck.
