    I find rolling pie dough between 2 sheets of parchment works best. It doesn't crack as much when you don't have all of that extra flour around the edges.

    I am waiting for my blueberries I could perhaps harvest some ginger soon and put it aside... Also I have been congratulating Carla on the Lolly-Music surname for so long that Lally is a letdown. Sorry Carla, you really are my fave!

    I'm tired of people having a problem with the word "moist." It's a perfectly serviceable word that describes exactly what the thing is. If you get squeamish over the word "moist," I don't know what to do for you.

    Oh no, I get the struggle from the HOT HANDS guy.
    I use spatulas and cornets for doing dough and IT'S MORE THAN OK to do so. I dislike the texture and if it says "cold butter" I avoid giving it too much warm with my hands. Just because I prefer how it works with the dry ingredients.
    I avoid metal utensils because they heat easily on my hands and I'm kinda afraid I screw up the temperature of the preparation lol wood and plastic all the way!

    If you have hot hands, wear gloves, even thin nitrile gloves really helps from keeping the butter a bit colder!

    I want to hear more about the giant snake on the deck that "took 20 minutes." Took 20 minutes...to charm with a flute? To roast on the barbeque grill? To chat with and catch up? Take selfies together? Also why would this distract one from making pie? Carla, you can't just lead into an exciting story and leave us hanging.

    My mom used to own a bakery. She never told me pie was hard so I never thought of it that way. I've never made a 'perfect' pie in my life, mind you. If I wanted a perfect pie, I'd go buy one :P
    I live in a hot and humid part of the world so a thing I do is make pie dough in a double bowl with iced water on the outside.

    Okay so I’m confused 😂. My grandma taught me to roll the dough out in plastic wrap, so as to not add any more flour. But I hear from many other people that using flour to roll it out is a-okay. What’s better to do?

    I made the pie it was amazing the crust was perfect and the taste of the filling was complex. The only things I changed from the recipe from the website was I used an 8 inch pan because its all I got and I was a little short with my lime juice due to very small limes. The only changes I would make if I were to make it again is used more cornstarch like 1/2 cup because when I cut into it four hours later it was swimming in juices.

      The fridge is actually where you really need to rest it. The butter needs to stay cold for ease of manipulation. Good luck!

    If you have hot hands then I say use tools and or the food processor. They have pastry tools for exactly that.

    pinch of cornstarch added to the filling and it will look even better also it keeps the flavour:)
