  • Vanilla Cake Recipe - Cotton Soft Vanilla Sponge Cake

    Vanilla Cake Recipe in gr and cups:
    - 3 Egg Yolks
    - 4 Egg Whites
    - 120 gr Sugar ( 1/2 cup + 2 tbsp)
    - 85 Gr Milk (6 tbsp Milk)
    - 40 gr Butter (3 tbsp Oil or butter )
    - 120 gr All Purpose Flour ( 3/4 cup + 2 tbsp)
    - 1 tsp Baking Powder
    - 1 tsp good Quality Vanilla
    - Zest of half a lemon
    - Pinch of Salt
    Cheesecake Filling:
    - 350 gr Philadelphia Cream Cheese (13 ounces)
    - 175 gr Heavy Cream ( 6.5 ounces)
    - 80 gr Powdered Sugar ( 1/2 cup + 2 tbsp)
    - 3/4 tsp Vanilla
    - Pinch of Salt
    I used a 10 x 15 inch pan.

      Bre West I was hoping to make the cake and frosting lemon. I don’t like vanilla at all. The smell of it nauseates me. I usually don’t use it at all.

      Diane Fiske-Foy could add some lemon zest to the frosting to make it lemony frosting and maybe a tsp of lemon juice to the frosting :) keep the sponge vanilla

    Can I make this cake in a 6inch round pan? And if I do how much batter would I need for 2 cakes? Would it hold its shape for stacking with an Italian meringue buttercream?

    I am one of those few who didnt stabilise their egg whites and during testing of stability of egg whites I turned the bowl over above my head *splat* lesson learned .. 😭😂😂😂
    I can vouch that is good cake though and anyone eating that amount of cake should host cake parties so we can all just dig in with our forks 😂😂

    I made this cake it was soooooo amazing the cake didnt have loads of sugar like other recipes and was super soft and fluffy! The frosting was so good with the cake and all the flavours were so good together...i highly recommend this recipe

    Emma, hello from Miami!
    Quick question, will this cake hold up dulce de leche instead of the cream cheese filling? I’m planning on making this cake on Friday and keep it refrigerated for my party on Saturday. I’m just not sure if u can refrigerate it with the deluxe de leche.

      Not sure - it might be the color of your egg yolks. If they were pale in color, your cake might look white rather than yellow. That probably wasn't the cause of the tilt, though ;)

    It took me 6 tries to get this cake down perfect. I never made a sponge cake before. It was a huge hit and will be one of the cakes for my son's wedding. Thanks...I searched 3 months for a cake that tastes this good. Fyi...I made it tasting lemony lol.

      Yes, I used lemon extract to the cake as well as the cheesecake filling...it was a refreshing and light cake. The kids ate the cheesecake filling that was leftover with Graham crackers and toast as well as just scooping it out to just eat...I made a lot hahaha

      Ok just read, yes u can! However if you are a beginner I recommend you make my basic vanilla cake. That recipe is a lot easier and gives great results everytime😘 Check my channel for "moist vanilla cake recipe".

Can you help me on how to have an exact measurments for the order I am recieving? Like for example, a customer asked me to make 1 box or 6 pcs of cupcake. But my recipe is for 18 pcs of cupcake.       You need to learn how to scale recipes up or down to meet your needs. This is much easier to do if you weigh all your ingredients (as opposed to using volume measures like cups).

    Emma, Would it be too much if I add lemon curd in-between some of the layers
    My store Smiths makes a lemon creme shortcake and a strawberry creme shortcake they that looks like this cake Except some layers have Lemon curd and the other layers have icing .(lemon creme shortcake) It’s $14 to have one made from my store bakery but I think I want to make it myself.
