How to make the Perfect Chocolate cake - Rich, dense moist cake recipe with Ganache Buttercream

    I'm finally sharing my perfect chocolate cake recipe - This is always a favorite of my clients, family and friends.
    This cake plays a "staring" roll over at Working with Lemons Matilda The Musical - Revolting Children music video
    8 oz unsweetened chocolate
    4 C sugar (3 3/4 C for high altitude)
    3 C flour (3 1/4 C for high altitude)
    1 1/2 tsp baking soda (1 1/4 tsp for high altitude)
    1 tsp salt
    2 C HOT water with 10 tsp coco powder dissolved in it (2 1/4 C water for high altitude)
    1 C sour cream OR greek yogurt
    1 C vegetable oil
    4 Lrg eggs lightly beaten
    Preheat the oven to 345
    Prepare three 8 or 9 inch round cake pans (if doing 8 inch pans I suggest 3 inches tall pans, or four of the 2 inch tall 8 inch pans) I use parchment paper circles on the bottom and a non stick spray on the sides
    Melt the baking chocolate in double broiler (or in a bowl over a simmering pot of water) then let it cool.
    In a large bowl, or bowl of a mixer add the sugar, flour, soda and salt and whisk together.
    In a separate bowl (or a large glass measuring cup) mix the hot water and cocoa
    Then add the sour cream and oil and whisk.
    Add the wet mixture in a stream to the dry ingredients and mix until blended.
    Add the lightly beaten eggs and beat.
    Add the cooled melted chocolate and mix until uniform in color.
    Bake at 345 40-45 mins (raise the heat by 25 degrees and lower the time by 5 mins for high altitude)
    20 oz chocolate chopped
    1 1/2 C cream
    2 tbsp corn syrup (stabilizing)
    2 C butter - slightly softened
    1-2 C powdered sugar
    Place the chocolate into a large bowl
    in a saucepan heat the cream and corn syrup - until just about to simmer
    Pour it over the chocolate and let it sit for 5 mins - then stir
    Let the ganache cool to room temp
    Beat butter and add 1 C powdered sugar
    add more if needed to achieve a thick buttercream
    pour the ganache into the buttercream and beat.
    Chill for 5-19 mins n the fridge, beat again, chill, beat, chill, beat - until your happy with the thickness

      Mercedes Sanchez: It's not a Blender...It's a "Stand Mixer." A blender is what you blend liquids in...A Mixer is what you just saw in use...There is also a hand mixer you can purchase.

    On the ganache buttercream, instead of using powdered sugar could you sweeten the chocolate with regular sugar instead before making the ganache? And make the buttercream sweet that way?

    I always have the problem that the powdered sugar can be "felt" when eating the buttercream/cake.. I don't know if it's the brand or just the way powdered sugar is in germany :(
    is there any chance to first melt the sugar? (e.g. with the butter)

      If you add the sugar 1 tablespoon at a time and beat a minute in between until all the sugar is gone. It melts and works perfectly. This also works if you use regular sugar.

    Even though the cake tasted nice there is too much sugar in the mix, and because of this the cakes stuck to my wire rack and were ruined. I have to make more now :( Thanks for the recipe though, it was kind of you to share. x

      hey! next time you can try cooling it on a cookie sheet lined with baking paper, it never sticks for me if i cool it that way. hope it helps!

    I'm going to use your recipe tomorrow to bake a birthday cake for my 3 year old grandson and wanted to ask if i need to use unsweetened chocolate for the cake recipe.     Just made this cake. Made a full 10” x 3” cake and a 8” x 2” cake. (Using the 3” tall one as a base for an Easter tiered cake). I used the 2” for was really good and moist. Think I have a new “go to” chocolate cake recipe! Thanks:-)

    My frosting was not thick/firm-ish like yours looks here. It was very silky-light n' fluffy then when I was icing my cake the frosting was seperating. What do you think i did wrong? Also, the cake didn'r taste much of chocolate.

      corn syrup essentially keeps the sugar from becoming granulated, also helps with body and shine. Corn syrup from the store is not the same thing as high fructose corn syrup that people are so freaked out about - it has a purpose and I highly suggest using it but you can leave it out if you'd like

    Some really great tips!! Personally I'd rather use melted butter instead of olive oil and would def add some vanilla extract and use coffee but your cake looks delicious. :^)

    Best Cake Ever! Made this yesterday, keeping all chocolate as dark as possible. I even buttered my cake pans and dusted with dark cocoa. It was sooooo rich and chocolatey! Loved the mix of ganache and buttercream, it gave the perfect balance of sweet and bitter from the chocolate. I did add 1/2 tsp of almond extract to the frosting and that just added another element and almost put it over the top. Thanks so much for the recipe!!

      It won't be the same consistency, my personal way to cut the sugar down is to cut the slices in half:) but I am also not big on diets so do whatever works for you
