    Recipe
    Makes about 30 mini cupcakes
    Ingredients
    ¼ cup (60 g) unsalted butter at room temperature
    1/3 cup (70 g) sugar
    1 large egg at room temperature
    1 tsp (5 ml) vanilla extract
    ¼ cup (50 g) packed cool unseasoned (plain) mashed potatoes,
    3 (45 ml) Tbsp milk
    2/3 cup (100 g) all purpose flour
    3 Tbsp (22 g) Dutch process cocoa powder
    ¾ (2 g) tsp baking powder
    pinch salt
    Ganache Glaze:
    ½ cup (125 ml) whipping cream
    1 Tbsp (15 g) unsalted butter
    4 oz (115 g) dark chocolate, chopped
    sprinkles, candied ginger or other small candies, for garnish
    Directions
    1. Preheat the oven to 375 F (190 C) and line 30 mini muffin tin cups with paper liners.
    2. Beat the butter and sugar together until light in colour. Beat in the egg and vanilla, and then beat in the mashed potatoes and milk.
    3. In a separate bowl, sift the flour, baking powder and salt. Add this to the butter mixture and stir until evenly combined. Pipe or spoon this into the prepared muffin cups, only filling each halfway with batter. Bake the cupcakes for about 12 minutes, until a tester inserted in the centre of a cupcake comes out clean. Cool the cupcakes in their tin before glazing.
    4. For the glaze, heat the cream and butter to just below a simmer and pour this over the chocolate, letting it site one minute before whisking until smooth. Carefully pour this over the cupcake, to fill up to the top of the paper liner and chill the cupcakes about an hour to set the glaze. Add desired garnish before serving.
    The mini cupcakes will keep, refrigerated, for up to 3 days.

      It's only about 10pc potato. I like the idea of potato and chocolate though.

    Hmmmm? U come up with such delicious looking recipes...I have a ricer and my wife does not like it when I make potatoes with it...she likes her mashed potatoes mashed....not creamed...but man they are good, both types...this reminds me of potatoes bread...just sweet...thank u Ms. Anna...love watching u... such an inspiration!

      Bran Miller I made the cake. It was very moist & delicious. The banana flavor was fairly strong. I think the potato will be more of a neutral flavor. usclip.net/video/8YFkEYBG3lY/video.html

      (: I think there is a tip where you "rinse the knife in warm water before slicing"..... so they "will not stick as you slice them" .... Try it...

    But why can't we replace flour by adding more mashed potatoes?
    Potatoes also have starch and binding properties, so why we can't use that?
