      Historically Past e Fagioli ('pasta fazzole') was a poor family's dish. It was not made with meat, leeks or extra virgin olive oil (just olive oil)...all expensive items. It eventually became a supper dish for Fridays when Italian Catholics did not eat meat. That being said, Thank you for showing your mother's recipe. I loved the way you explained the process. Thank you again.

    You can totally eat the parmigiano rind! My family fights over the rinds when we make minestrone or pasta e fagioli, it’s kinda chewy but delicious flavor!

    Carla, thank you for your great recipe, this reminds me of a traditional recipe in Malta which is called Kawlata. It is very similar to this, my grandparents make it so divinely. Very wholesome and healthy. All the best.

    I gave this a shot, and mine turned out pretty grainy. I suspect that I over-processed the carrots and they didn't really cook down the way I expected them to.

    Edit: My only exposure is through the insistence of my wife and her family who are all Venetian, they seem to be the exception, not the rule. So I take back the minestrone comment!

    Interesting. My pasta e fagioli is a much simpler recipe. No garlic but onion cooked in oil until softened, then add basil, sprig of fresh rosemary, chilli flakes and tomato purée. Add stock, cooked borlotti beans (half of which have been puréed), and then add pasta. The puréed beans add the richness and the rosemary gives the lift.

    I was thinking if perhaps you don't like carrots, maybe you could use pumpkin and add a bit later so that it won't get too mushy? I just think it's similar in texture when cooked and it has the sweetness of a cooked carrot. I don't know though if someone might hate both carrots and pumpkin.

    Just made this,,, ish. Mine turned out a lot thicker, and I had to much salt in my noodles/to many noodles so they became to over impowering. Also accidently used 2/3 olive oil instead of 1/3. Still tastes great, and now I know for next time!
