The key to a soup with fully developed savory flavor starts with the soffritto-a mix of aromatic vegetables that are slowly cooked in the first stage of cooking. Take your time sweating down the vegetables until they are completely softened before letting them take on any color.       Historically Past e Fagioli ('pasta fazzole') was a poor family's dish. It was not made with meat, leeks or extra virgin olive oil (just olive oil)...all expensive items. It eventually became a supper dish for Fridays when Italian Catholics did not eat meat. That being said, Thank you for showing your mother's recipe. I loved the way you explained the process. Thank you again.

    I worked for many years as a cook for a very plump family of billionaires. Those days are over, but I can tell you this, I wish these BA videos were around back then. It would have served me well. They loved my cooking, and I have had a BA subscription since I was 11, but USclip could have "upped my game." Cheers!

      XYZ LUCINA spinach works great. Also mustard greens. Or escarole/endive. Swiss chard.
      They all have a bitter taste. Or you can leave it out. But spinach works perfect and is easiest.

    I have cooked this recipe about 20 times now and LOVE it. I have made it vegan but subbing the ham hock with vegan butter and dropping the parm rinds. I had a little more beans, tomatos, and carrot to make it more flavorful. Annnd i use just water instead of chicken broth and IM TELLIN YOU, its delish :)

    stupid question stay stupid if you don't ask, is the ham hock cooked when Carla adds it to the sofrito in the pot? or is it just so dried out that it looks cook? or has it been smoked? do you smoke ham hock? i don't tend to keep ham-hock around so can i just toss some bologna in there?

      pabloplato you can get ham hocks. Usually 3 in a pack for 4
      Dollars at Walmart. Or local grocery. They are intensely smoked. It add a very deep smoky seeet taste to the base of the soup. You just discard it at the end or use it. But very little meat.

    you guys need to change the food processor blade. it got recalled by cusineart and they are giving free replacements to the new one. the current one you have is know to chip from the rivets connecting it to the plastic component so the new one is molded into the plastic.

      sure! just add the spinach in around the time you add the pasta. kale is super hearty and needs time to cook down but spinach is delicate and basically just needs to be wilted. hope this helped!

    This is definitely NOT really Italian. Always carrot, onion, celery, and then add a chunk of pancetta or salt pork. In many northern Italian areas all they put is some tomato paste to color the soup and intensify the other flavors. KALE? That's it: I'm out.

    I think a rough chop of celery, carrots , onions and garlic is much nicer. It more pleasing to the eye to see the vegetables not mush. I never add any meat. Your recipe sucks!

    Carla said that you should use a Parmesan rind especially if you are vegetarian and not using the ham hock
    But Parmesan is a non vegetarian cheese. It contains animal rennet. There are vegetarian variations of Parmesan, but it cannot legally be called Parmesan unless it conforms to the traditional methods of creation, which require animal rennet

      @stormbob ? She clearly doesn't know, just as much as you. Traditional Italian hard cheeses use animal rennet usually calf rennet, hence why pesto isn't allowed for vegetarians because parmigiano reggiano is used to make it. Please, no need to get on your high horse about a topic you don't know about.

    FYI. If you're "not using a ham hock because you're vegetarian" you wouldn't be eating pecorino, grana Padano or Parmesan because non of them are vegetarian cheeses.

    I am an Italian American 2nd generation. I have eaten pasta fazool all my life and never have eaten or made it with carrots. No one in our family likes carrots...period. And guess what. It tastes just fine.
