As a Japanese chef, you undergo hardcore training, you get pushed around, do unpaid work overtime, one single imperfection and your Master may throw your dish into your face.     客の目の前で握って見せるのは寿司屋の花形だけど、それ以前の仕込みの重要度は握る動作と同等以上と思う。
    この人はそれをよく分かってる人だね。
