No coffee? Should always add a little coffee or espresso powder to a chocolate cake. Really deepens the chocolate flavour.

Where do I begin. I've been cooking in the kitchen for 35 years. Making various recipes from cookbooks and internet. I seen this recipe on the internet and it sounded so good. So I decided to look it up on USclip. Show and Tell I've always believed in. Watching you make this recipe looked so easy for my skills. Well, I made the cake portion in a true 350° oven. Baked it for the time you specified. A little overdone. Not bad though. (actuality, I baked it for 20 mins. and toothpick tested it.)(it needed more time. 10 mins. more)(28 mins. all together would have done it). Still came out ok. Got it out of the pans no problem. It felt moist and springy and I was happy with that. Now, let's do the frosting. Followed the frosting recipe to the T. And it was runny. Added more powdered sugar. (1 cup more). It's still kinda runny. Ok, refrigerate for 20 mins. stirring every 10 mins. Now it looks pretty good. (So, I thought). Began frosting the Cooled Cake and the frosting began to run down the cake. Got MAD. Frosted the cake from Top to Bottom and watched it just run down the cake. I believe you used cake strips to bake your cake. I believe you refrigerated your frosting. I believe you added Cool Whip to your frosting. All in All. Your editing Sucks!

I like this one but the original chocolate cake on the back had buttermilk and butter in it with a soft fudge boiled frosting. I use that recipe and LOVE it, I do use hot coffee instead of the hot water which intensifies the chocolate taste with no coffee taste. I had the recipe saved from the 50's when I won 1st at our county fair in 4-H as a 12 year old.

    • Sunshine Baker
Sunshine Baker 4 months ago +1

@Charlotte Pall The original recipe was one half cup of butter--3/4 cup of cocoa mixed with 3/4 cup of hot coffee to a paste before adding to mixture. 1 c. buttermilk. I used a fudge frosting which is also on the back of the can of the 50's--it was the same as old fashioned cocoa fudge only removed from cooking and beat before fudge stage, about 230 degrees on thermometer. Best cake I have ever had, have tried many others thru the years but none beats this one so I still make it for special celebrations.

My mother made this cake, my three sisters make this cake, and I make ONLY this cake. This is the most moist, delicious chocolate cake ever. Use hot coffee instead of boiling water, use a little more vanilla, too. Don't flour the pans. Just cut rounds out of wax paper or parchment, and don't grease the pan sides or the cake doesn't rise as much. It won't stick. I make my own buttercream with more butter and whipping cream for the liquid. Forget any other chocolate cake recipe. Don't bother. I guarantee, this is the only one you need. The layers don't rise really high, so I increase by 50% and make 3 9" layers. Now, all I need is a yellow or white cake that is as good as this one. They are all disappointing.
